The Ani's breakfast burrito wrap for athletes is what I usually eat after my first workout of the day. Usually a swim or a bike.
It is highly customizable. You can add more egg whites or whole eggs to increase protein content. And vegetables too to add more volume, fiber and micronutrients.
It is very light on the stomach and best for people with multiple workouts in a day.
Ingredients:
1 whole wheat tortilla
3egg whites
1 whole egg
1/4 avocado, mashed (optional)
1/4 cup diced tomatoes
1/4 cup mushrooms
1/4 cup diced bell peppers
1/4 cup diced onion
1/4 teaspoon garlic powder
Salt and pepper or any other seasoning
Olive oil (use sparingly)
Instructions:
In a small bowl, whisk together the egg whites and garlic powder until frothy.
Heat a nonstick skillet over medium-high heat and spray with cooking spray.
Add the diced onions and bell peppers and mushrooms to the skillet and sauté for 1-2 minutes or until the onions start browning.
Pour the egg mixture into the skillet and let it cook for 1-2 minutes or until the bottom is set.
Use a spatula to flip the eggs and continue to cook until the eggs are fully set.
Warm the tortilla in the microwave for 10-15 seconds or until soft and pliable.
Spread the mashed avocado onto the center of the tortilla.
Add the cooked eggs, diced tomatoes, sautéed onions, mushrooms and bell peppers onto the avocado.
Season with salt and pepper to taste.
Roll up the tortilla tightly, tucking in the sides as you go.
